(The Complete Cooking Light Cookbook 2000 edition)
I love cooking this quick dinner for my husband and family. It's inspired by the Shrimp Scampi recipe on page 241 of the C.L. Cookbook, a cookbook I love! Use it as is or mix in noodles.
Either way it's wonderful
Shrimp Scampi
2 lbs peeled large shrimp
3 Tb stick butter
1 cup chopped red bell pepper
8 garlic cloves, crushed
1/2 cup dry white wine
1/4 cup minced fresh parsley
1/4 cup fresh lemon juice (I use a bit less)
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp paprika
cooked noodles, fettuccine or spaghetti
grated mozzarella cheese
Melt butter in a large skillet, add bell peppers and garlic. Saute 2 minutes. Add shrimp, heat till pink. Stir in wine and lemon juice. Add parsley, paprika, salt and pepper. Cook throughly until shrimp is done. Can serve as is with slices of French bread or you can now add cooked noodles. Stir in noodles and cover a few minutes. Remove cover and sprinkle cheese over top until melted. Serve hot.
