Nana's Recipes Variety of Cakes (Recipes recorded by Nell Farrar White 1960s)



Plain Cake
1 cup butter
2 cup sugar
3 or 4 eggs
1 cup sweet milk
3 cup flour
3 tsp Baking Powder 
1 tsp vanilla

(No instructions given on how to mix or cook. Assuming that she already new how.)

Filling for Coconut Cake
2 cup sugar
1 cup water or coconut milk
2 egg white

Cook sugar with water until spins an thread, pour into stiff beaten egg white add coconut and vanilla.

Jeanelle's Pound Cake
3 cup flour
1/2 tsp soda
1/2 tsp Baking Powder
3/4 tsp salt
pinch cream of tarter
Sift to together

Mix
1 cup shortening
2 cup sugar
4 eggs, unbeaten one at a time
1 Tb vanilla
1 Tb lemon (scent)
1 cup buttermilk

Bake 1 1/2 hrs 300º-325º

Pineapple Loaf Cake
1/2 cup shortening
1 cup sugar, creamed. Beat in
2 egg yolks
1 tsp lemon flavoring
1/4 tsp soda, stirred into
1 small can crushed pineapple

Add 1 3/4 cup flour
1 1/2 tsp Baking Powder
Put 1/4 tsp Baking Powder into 2 egg whites, beat stuff, fold in and bak in greased pan 40/ minutes. 350º

Pecan Nut Cake -good!
Florine Bowers recipe 1945/1948
1 cup butter
2 cup sugar
4 cup flour
(2 cup flour rolled into nuts)
6 eggs
1 lb raisins 
1 quart nuts
2 tsp Baking Powder
1 cup Bourbon
1 tsp vailla
spices if desired

Bake in moderate 300º-325º oven about 4 hours.
