My dear husband loves his morning cereal. After researching the cereal industries and how the oats are processed I made the decision years ago to make my own cereal. Wish I had done it sooner!
Granola Cereal

8 cups of organic oats
1 tsp of cinnamon
1 cup honey (I use 1/2 cup)
1/2 cup of organic coconut oil
2 tsp vanilla
Nuts- we like almonds or pecans but any nut is fine (add amount you like)
1 Tb ground Flaxseed
organic raisins (can add after granola is cooked for chewy raisins or during cooking for crunchy)
Preheat oven to 300º Fahrenheit. Line large baking sheet with parchment paper. Combine all dry ingredients in a large bowl or stand mixer bowl. Add oil and honey to a small saucepan, melt over low heat till thin consistency. Remove from heat, add vanilla. Stir to combine. Pour over dry ingredients. Stir until evenly coated.
Pour mixture onto lined baking sheet and spread evenly. Place in oven, bake 30 minutes, stirring once at the 15 minute mark. Let cool completely and transfer to glass containers with a tight fitting lid. Enjoy your morning bowl of cereal with milk.
